Ingredients and spices that need to be Prepare to make Thandai Phirni:

  1. 4 Tbsp Gobindo bhog rice
  2. 5 cups milk
  3. 2 Tbsp Thandai powder
  4. 1/2 cup sugar
  5. Pinch Nutmeg powder
  6. For Thandai Masala Powder
  7. 8-10 cashew nuts
  8. 8-10 blanched and peeled almonds
  9. 1 tsp fennel seeds
  10. 1 Tbsp poppy seeds
  11. 10-12 black pepper corn
  12. 1 tsp melon seeds
  13. 4-5 green cardamoms
  14. pinch Saffron

Steps to make to make Thandai Phirni

  1. Make the Thandai Powder - in a blender jar add blanched & peeled almonds, cashew nuts, poppy seed, black peppercorns, fennel seeds, green cardamoms, saffron and blend until smooth powder. Set aside
  2. Soak rice and set aside for 30 mins. Add 1/2 cup milk to the soaked rice and blend smooth.
  3. In a pan heat 4.5 cups milk and keep stirring on high flame. Add the blender rice and cook on low flame stirring continuously until rice is done. Stirring will help to avoid lumps of the rice
  4. When rice is cooked add 2 Tbsp Thandai Powder and mix well stirring continuously to avoid lumps. Add sugar, stir and set aside
  5. Pour into earthen bowls and refrigerate until set. Garnish with chopped dry fruits and enjoy
